Savory Italian Asparagus
Note: To prepare asparagus for cooking, hold the base of the stalk and snap off the end where it seems to break naturally. The end removed is the tough part; the remaining stalk should be tender after cooking.
1 pound fresh asparagus
1 medium tomator, seeded and chopped
2 T chopped green onions
1/8 tsp dried whole oregano
1/8 tsp dried whole thyme
1/8 tsp pepper
2 tsp Grated RF Parmesan cheese
Snap off ends of asparagus. Remove scales with a knife or vegetable peeler, if desired. Cover and cook in a small amount of boiling water 4 minutes or until crisp tender. Drain; arrange on a serving platter and keep warm.
Combine tomato and next 4 ingredients in a small bowl; stir well. Spoon tomato mixture over asparagus; sprinkle with cheese. Yield 4 servings (about 31 calories per serving)

Microwave Instructions:
Follow instructions above. Arrange spears in an 11 x 7 X 2 inch baking dish with stem ends toward outside of dish; add 1/4 cup water. Cover with HD plastic wrap and vent. Microwave at HIGH 6-7 minutes or until crisp tender. Let stand covered 1 minute and drain. Proceed with recipe as directed.
