Fat Smash Diet Recipes - P1 - Oatmeal Cookies

:chef: Almost forgot to share this recipe...I made a batch and have been having them with a big glass of milk for breakfast:
Oatmeal cookies:
1 cup uncooked (old fashioned) oatmeal
1/4tsp salt
1 ripe mashed banana..the riper the better
1 egg white (or 1/4 cup egg sub)
2 packets of Splenda
1 Tblsp of cinnamon
1/4 tsp vanilla extract
1/8 tsp almond flavoring
Mix the ingredients together and spoon by teaspoon into cookie sheet (I spray with Pam) cook 10 -15 minutes in 350 degree preheated oven.:cookie:

When I made this recipe last night, it made 12 cookies. When they bake, they don't spread out at all, so you may want to squish them a bit on the cookie sheet so the middle cooks. Just a suggestion! The are DELICIOUS!

I just made this recipe with about 1/2 cup of 100% pumpkin (out of a can.. make sure its not 'pie filling') instead of the banana. Even better! I used a bit of Splenda brown sugar instead of the regular Splenda. YUM. BTW.. Splenda brown sugar is the bomb! I put it on baked sweet potatoes for dinner and a spray of no calorie "I can't believe its not butter". YUM.

I found some frozen waffles made out of brown rice and soy! They are dee-lish-ous. Brand name is Van's wheat free waffles.

We can't have brown sugar in Phase 1 though - even splenda, right?

jenne, technically we're not supposed to be having ANY sweetner on Phase 1. However, it has been mentioned in another post that if you don't want the full "detox" you can add minimal amounts of sweetner. Considering it's only 4 tsp for the entire batch I don't think it would hurt too much. However, you could leave out the splenda (esp if your banana is super ripe) and see if you like the results. Hope this helps!

Why do I get so confused? I thought we were allowed 2 packets of Splenda a day on Phase 1. Oh bother!
It hasn't hurt when I do have it (maybe every other day?) so...

jenne, I don't think it's you, I think it's the book! It's quite confusing. Sweetners are not mentioned until Phase 2 when he says you may have 4 tsp (pg 34), but as I said in my previous post someone wrote to Dr. Ian and he mentioned you may add Splenda to your oatmeal in P1 if you don't want to be as strict with the detox. So complicated! I am not having any just cause 1) I normally don't like oatmeal, yogurt, etc sweet anyway so I don't mind and 2) It's not on the approved food list.
However, given all that I think that the 2 packs a day prolly won't stop anyone from gaining all that much, if anything. I feel like its just to train our palate not to crave sweets. So if you need those packs of Splenda for your oatmeal or whatever, go for it, esp if it gets you to eat healthier overall.
Now, to talk about these actual cookies. While I made them and they tasted really good, they never got really crispy like I was hoping. Are they supposed to? I mixed some pumpkin w/ the banana and wasn't sure if this affected the moisture or what. Any tips would be appreciated!

I made these today and they are delicious! I added some applesauce to my batch..soo good. My son and husband, who say they hate diet food, loved the cookies as well!! Tomorrow I'm gonna try the pizza!!

Hello,
Thank you for this recipe. I doubled it and added raisins and they are delicious! I used a small ice cream scoop to form the cookies and I got 31 to a batch! If anyone is interested, I did the nutritionals and here they are:
2 cups oatmeal = 1214 cal, 21.5g fat, 33.1g fiber
2 bananas = 180 cal, .7g fat, 5.3g fiber
2 egg whites = 34 cal, .1g fat, 0g fiber
½ c raisins = 217 cal, .3g fat, 2.7g fiber
Totals: 1645 cal, 22.6g fat, 41.1g fiber
Ea: 53 cal, .729g fat, 1.3g fiber

I justed wanted to let you know that I made these last night with my last banana that was on its last leg and it was great! I used also a little bit of the splenda brown sugar, maybe 1t, just enough to add a little sweetness. Thanks for the recipe! I will try this with canned pumpkin!!!:carrot: :carrot:

No, we aren't allowed any dried fruit on phase I.

Hi toots5780~ There are lots of recipes on this Fat Smash recipe thread. I have tried some of them. I also google vegetarian recipes and adjust them to the phase I am on.

Thank you for recipe. cookies are very good. I added apple sauce (with no sugar) instead of banana. Or you can also add shredded apple. It's more fruity. :)

How "ripe" are the bananas that you guys are using for this recipe?
I made the cookies yesterday, and they tasted horrible. :( I had to throw them away so I'm thinking perhaps my bananas weren't ripe enough???

I just made these and they are REALLY good. Mine taste like banana bread. I used 2 egg whites (4 TBs of liquid egg whites). I used a level TB for each cookie and got 10 in all. 5 would be the same as 1 serving of oatmeal. Quick, easy and delicious!

I tried this recipe and it could have been a little more flavorful and sweet..... but i guess thats the whole point, huh!!? HAHA!!!
And no, JellyBelly, the cookies were horrible!!!! Besides, how nasty can a banana be...dont blame it on that.....hahahahahaha!!!!!

These are awesome, the perfect ending to a Fat Smash Phase 1 Day with a warm glass of milk!

Oh my gosh!! These are sooooo good. I made them with 1/2c unsweetened apple sauce instead of banana and stevia instead of splenda. I got 9 cookies. I well enjoy them tomorrow with tea!! Thank you for sharing!!
