I was so busy this morning (even went to the YMCA and met with a trainer for weight training for an hour) that I ended up eating brunch instead of breakfast and lunch :o
3 cups mixture of black beans, rice, fresh salsa, romaine lettuce and guacamole
2 cups steamed broccoli, 3 T. hummus, 1/2 c. brown basmati rice, 1/2 c. baked sesame tofu, 1/2 cup shreded beets and 1 t. lemon ginger dressing
1 cup light chocolate Silk, 1 banana, 1 T. health food store peanut butter and 1 T. ground flax (this was really delicious and rich!)
8 oz. grape kombucha
64 oz. water
I need more fruits and veggies tomorrow!
