Country Captain
This is an old favorite?a mild, colorful curry with a delicious
combination of sweet and spicy flavors.
Makes 4 servings
2 teaspoons peanut oil
8 ounces skinless boneless chicken thighs, cut into chunks
1 cup diced onions
1 cup diced green bell pepper
1 teaspoon mild or hot curry powder, or to taste
2 garlic cloves, crushed
1 cup stewed tomatoes
1/2 cup diced celery
1/2 cup low-sodium chicken broth
2 tablespoons raisins
10 small pimiento-stuffed green olives, sliced
1 teaspoon dried oregano leaves
1 small Granny Smith apple, cored and diced
2 cups hot cooked long-grain rice
In medium skillet, heat 1 teaspoon of the oil; add chicken.
Cook over medium-high heat 2 minutes on each side, until
golden brown. Remove chicken from skillet; set aside.
To same skillet, add onions and green pepper; cook, stirring
frequently, 4-5 minutes, until onions are golden brown.
Reduce heat to low; add remaining 1 teaspoon oil and the
curry powder. Cook, stirring constantly, 10 minutes. Add
garlic; cook, continuing to stir, 2 minutes. Add tomatoes,
celery, broth, raisins, olives, oregano and reserved chicken;
cook, stirring occasionally, 20 minutes, until mixture
thickens slightly and flavors are blended. Add apple; cook,
stirring frequently, 5 minutes longer, until apple is just
tender.
To serve, spoon rice onto serving platter; top with chicken
mixture.
