Hey Chicks! I thought it might be great to start the daily menu thread again. I am POP again and I know that I could use some inspiration for daily menus. I think the newbies could benefit also. I'll go first

La lite- midmorn snack


1 whole wheat/flax Joseph's pita (these are darn good and seem to be good for you) with 1 0z LF cheddar, 1/2 sliced tomato sliced on top - 6 oz grilled chicken: 1 apple = 1/2 D (I always go over with my dairy- i love cheese too much), S, P and V, F

la lite- late afternoon snack (can't eat the bars after four pm or I turn into a sugar craving gremlin for the rest of the night)


7 0z grilled or baked haddock (with lime juice and spray of olive oil), cukes marinated in red wine vinegar with mortin's lite salt, fresh garlic and pepper,
1/2 of 1/2 russet potato baked for about 45 minutes with spray of pam and onion powder (P, S and VVV ( i usually eat whole cuke)

4 oz Boar's Head Low Sodium Deluxe Ham (7 slices - depends on how your deli slices it)
1 wedge Laughing Cow lite swiss cheese
(Take small pieces off cheese and spread on ham slices and wrap up)
3 c. lettuce w/15 sprays Balsamic Breeze Salad Spritzer
Medium Carrot cut into sticks

LA Lite

7 oz tilapia
1T horseradish sauce
1 oz. Kraft 2% Reduced Fat Parmesan
(Sprinkle tilapia w/Morton's Lite Salt, pepper, garlic powder and onion powder, cook over med-high heat in Pam. Before turning the fish, sprinkle top side with spices and spray the fish with Pam. This gets the fish nice and brown on both sides. When it is done, spread on horseradish and sprinkle with cheese. Sounds weird, I know, but I got this from a counselor at COD, and it is YUMMY)

1c baby portobello mushrooms, sliced
5 scallions, sliced
(pan fry in Pam with Mortons, pepper and garlic powder)

1/3 c brown rice
(I cook it a cup at a time and add a packet of low sodium chicken broth to the water for flavor)

Praz - just wanted to tell you in your husbands menu kit book in the back there are a couple pages with sample menu days also. When I first started that helped me a lot.

Wow guys -- what a great thread! Here is my day

B= 1 laughing cow cheese wedge on toast w/4 ounces juice (1/2 P, 1S, 1FR)

S= yogurt (1D)

L = Rice cake w/4 ounces Turkey breast (1S, 1P) - (I didnt know we could have boars head ham??? I soo miss my ham -- love the idea of spreading the laughing cow cheese in it from an earlier post) - 2 tomatoes (2 V) - 4 ounces juice (1 FR)

S =

D = chicken (8 ounces), spag. squash w/1tsp butter & montreal seasoning (2V) = 4 ounces juice (1FR)

S = toast w/cheese - 2 ounces (1S, 1D), juice (4 ounces)

I'm still short one starch, but just ogt home from work (yes its late) and will prob have a rice cake or something similar -- maybe a graham cracker.

Stacy - The refried beans probably contained lard if you ordered them at a restaurant. Also, COD might not like you combining all the veggies. I would ask for their suggestions. This is a learning process.

Cassi -- are we not suppose to combine veggies? I typically have my veggies in one sitting (dinner)

Yesterday (8/16) I dont know if I was on/off program or not lol. I did day camp with my son and it was hard, because I didnt have time to pack / plan right or enough for me;

B - 1 protein shake, 100c (1/2 P)
L - turkey breast on 2 slices RF bread (1P, 2 S)
S - cheese 2 ounces (1D)
D - spag w/sauce (1S, 1V), Chicken, 1P, spag squash (2V, 1Fat), 1/2 roll (1S)
S - cheese 2 ounces (1D)

missing my fruit - only had 4 ounces of the krud juice (1F), so I missed that for the day and missing one V. I should have thrown some fruit into my bag, but we were gone from 8am - 4pm and I prepared my kids food but as always, didnt prepare enough for me.

I know I OD"d on carbs (starches) -- we got home late from day camp and my son was sick.

Sue - What the COD told me was that splitting the veggies to combine them was a no no. If I have four different veggies at dinner and count them as four whole veggies, that's ok. It's when you have a 1/4 carrot, 1/4 tomato, 1/4 celery and 1/4 lettuce and call it one veggie that they were fussing.

That being said, if you go to a restaurant in their guide and you have a salad, I think they count it that way, and let's get real - we didn't get fat eating veggies (that's what I always tell them). I think they general gist of it is to spread out your exchanges so you're not piling everything in at one meal (especially at night). And when you get to maintenance, the first thing you get in unlimited veggies. I wouldn't stress about the veggie thing, but if you stall, maybe ask COD their opinion. I am BY FAR not the LAWL expert!!!!

I'll say it again - we did not gain our weight from eating veggies. :)

Deb said on another thread that she thinks it's okay to combine veggies that are measured the same way. You're not supposed to combine tomatoes with peppers and carrots. I don't know. As I said on that thread (remember I'm new) I've been doing stir frys 3-4 times a weeks with frozen stir fry mixes and dh hasn't gotten in trouble. He did hear about it when we had pasta two days in a row but the sauce was homemade from fresh tomatos (my first try at it) and it was amazing! I canned 12 quarts of it for later and plan on making more this week. (I was complaining about too many tomatos but not anymore!) YUM!

It was YUMMY! It felt sooooo sinful! I will post the recipe, but basically you pound a chicken breast really thin, put in a half slice of RF swiss, tie it up (we used toothpicks), and cook in a skillet. You make a sauce of white wine, RF butter and low sodium chicken broth. It works out to 1/4c chicken broth, 1T wine and 1/4T butter per chicken breast so I counted it as a C (or even 2C)

I made the tuna recipe posed last week for yesterday's lunch. The flavor was good but dh hated the consistency! Said it was like eating baby food. I thought it was a pate'. Oh well, you can take the boy out of the country, but you can't take the country out of the boy! Gotta luv him. I'll make it next time without using the food processor. (Mine is an industrial for my catering so it may have been TOOOO powerful for tuna. It really was pulverized!)

The Mrs. Dash marinade was good but has an orangey flavor that I don't like with the chipotle flavor. I've got a $2 coupon, so I'm gonna try another flavor.

Pearl - When I had my tonsils out a number of years ago, my mom made me chicken salad in the food processor so that I could swallow it. I loved it so much, that's how I make my chicken and tuna salad now. The "real" way I make the tuna salad is the tuna and mayo, a slice or two of onion, some fresh ground black pepper, a little salt, and then the secret ingredient is McCormick's fried chicken seasoning (I think they changed the name to "original chicken seasoning"). I stopped using it because of the sodium content, but I stilll use it here and there. That's why the paprika and garlic powder is in there.

I am here, too. Started last monday, so just trying to get the hang of it. So far, so good. Have to have time to make my postings pretty like yours. Having the same old stuff, but feel I need to now until I get the hang of it. Takes lots of planning to bring food to work for my 12 hr. shifts. I feel I can do it, but afraid to eat out or be around others when there is food involved.

He doesn't like cream cheese, cheese spreads (laughing cow), pate's, (I make a killer smoked salmon pate' that he literally smokes on the grill for me!) In other words, if he doesn't have to chew it, he doesn't like it! With two exceptions. He loves cooked pudding and ice cream (he chews them!) I can't help it, I love him!

B - 1 wedge RF laughing cow cheese rolled in 2 oz low sodium deli roast beef (1/2P,1/2D)

L - 2 oz low sodium roast beef & 1T RF mayo in LaTortilla Factory tortilla; 1/2 cucumber, sliced, 6 baby carrots (1/2P,Fa,S,V,V)

S - In-laws over, so we served appetizers. I had 12 RF potato chips and about 2 1/2T RF onion dip, 10 pretzel sticks and 2T honey mustard dip, and about 3 oz shrimp cocktail. I skipped the LA Lites today.

D - 6 oz skirt steak, 1/3c orzo with 1 oz parmesan cheese and 4 cherry tomatoes, 1/2c steamed spinach, 9 oz red wine (P,S,1/2D,V,V,Fr,Fr,Fr)

S - We had dessert - I had 1/4c FF SF vanilla ice cream over 2oz of cake

A little over, but not too bad.


B - Didn't get any!

L - 6 oz tuna w/1T RF mayo on tortilla (p,fa,s)
1/2 cucumber w/1T RF sour cream (v,c)

D - LAWL Chicken Cheesesteak on pita (p,s,v,1/2d)
1c mushrooms, sauteed (v)

NOTE TO SELF AND OTHERS: I was on plan, but up .4. COD said it's due to the red meat (see steak and roast beef) and pork over two days. Also, I did not get my water in yesterday. Lastly, due to all the previous two things, things "weren't moving" like they usually do before WI. If you're going to have a few days like this, give WI one more day, or remember not to beat yourself up when you get on the scale!
