So I love tofu and since I've started on an eat-healthy regimen I've been eating a lot more of it. I usually buy extra firm and make either tofu stirfry or tofu lasagna, and occasionally tofu chili. But I am getting pretty bored of these few recipes. They're really all I know how to make with tofu.

Any new suggestions before I get bored of tofu completely? :D

Tofu...I personally LOVE it, but can't eat soy due to my thyroid condition. But, here are some ideas: Slice it into thin dominoe sized pieces, brown it on both sides, and simmer it briefly in soy sauce and a bit of water with a dash of sugar. Stir fry spinach, with garlic, then add the tofu and stir gently. This is a family style Chinese dish called Bean Curd and Parrot. You can dip tofu slices in flour, then egg, then Italian bread crumbs and saute it. Take the sauteed, breaded slices and serve them with cheese and tomato sauce, or bake them like a tofu parmesan layered with tomato sauce and cheese.

I do a lot of Asian cooking, and used to use a lot of tofu in soups, which you probably already know. I have a number of recipes that combine tofu and pork as well. I will look for more recipes in my files and try and post more.

Once in a while, I splurge and eat it, even though I am not supposed to. :) I do miss it!

I tried this the other day... 2 servings

Peel and slice a sweet potato. Lay slices in a sprayed pie plate.

Mash firm tofu, then mix with 2-3 egg whites (or 2 whites and 1 whole), chopped onion, red pepper, zucchini (whatever you have), whatever seasoning you want, and 1/4 cup bread crumbs. Spread over the sweet potatoes.

Bake at 350 about 40-45 minutes.

During the last 5 minutes, spread some spagetti sauce over top, and bake until sauce is heated.

Serve with broccoli, or asparagus, or green beans.

It turned out good (except I forgot the spagetti sauce).

I love tofu in salad. You should try a caesar salad without chicken and put tofu in it instead.
