Tropical Apple Salad Platter


1 Golden Delicious apple, cored and sliced
1 Red Delicious apple, cored and sliced
1 fresh pineapple, pared, cored and cut into spears
1 honeydew melon, pared and cut into chunks
1 papaya, pared and sliced
1 banana, peeled and sliced
2 cartons (6-8oz each) non-fat lemon yogurt
1 tbsp honey
2 tbsp lime juice

Arrange Fruit on a Large Platter. Serve with lime cream dressing. Makes 8 servings.
To prepare Dressing, Combine yogurt, honey, and lime juice in a small bowel; stir to blend. Makes about 2 cups of Dressing.

Makes: 8 servings
Serving size: 1 salad plate with cup dressing

Margarita Melon Salad


2 limes, juiced
2 fl. oz. tequila
2 Tbsp orange liqueur
3 tsp sugar substitute
4 cups cantaloupe, seeded and cubed
4 cups honey dew melon, seeded and cubed
4 cups small watermelon, cubed


Combine lime juice, tequila, orange liqueur, and sugar in a medium size bowl.
Add melons and toss to coat with the tequila and lime juice mixture.
Serve in shallow bowls.

Makes: 4 servings
Serving size: 1 cup
