2 small apples
1/3 cup Sugar Twin brown sugar
1/4 cup oatmeal
1/4 tsp cinnamon
1/4 tsp nutmeg
Preheat ovenn to 350. Spray dish with pam. Spread out sliced apples in dish. Mix rest of ingredients and sprinkle on top of apples. Bake until golden brown.
Counts as 2 Fruits and 1 Starch. (Recipe makes a single serving)

*BERRY APPLESAUCE JELL-O*
1pkg sugar free (6oz) strawberry jello
1 cup boiling water
2 cups frozen unsweetend strawberries
2 cups unsweetened applesauce
2 tablespoons lemon juice
In a bowl, dissolve gelatin in boiling water. Stir in the strawberries until thawed and separated. Add the applesauce and lemon juice; mix well. Pour into an 11-in. x 7-in. x 2-in. pan; chill until set.

*SPARKLING FRUIT GELATIN*
1/2 cup canned, crushed pineapple, drained
1 tsp lemon juice
1 package sugar-free mixed fruit flavored
1 cup hot water
6 oz diet ginger ale
Peel and core apples; cut into thin slices.
Place apple slices in medium bowl. Add
pineapple and lemon juice. Slice grapes in
half and add to fruit mixture. In a
separate bowl, mix gelatin and hot water.
Stir until gelatin is dissolved. Once
dissolved, pour ginger ale into gelatin.
Refrigerate 30 minutes, or until gelatin
mixture is the consistency of raw egg
whites. Add the fruit mixture to gelatin
and fold in gently. Refrigerate until
firm. Serve chilled.
Makes 4 servings

1 pkg Silken Tofu
1/3 cup Splenda + or - your preference
1/2 cup cocoa powder for chocolate
1 t vanilla extract
Blend in food processor until smooth. Allow to set about 20 minutes in the fridge.

This is excellent pudding. The tofu has no taste, so it provides texture, and tastes like whatever you add to it.
Some members have gotten better results with this recipe based on changing their mixing method-such as using a food processor, or "bullet" or other mixing method for a finer texture.

Honey Rum Grilled Bananas
2 Tbsp Rum
4 tsp honey
1 tsp ground cinnamon
2 small firm unpeeled bananas
2 cups vanilla, non-fat, no sugar added ice cream
In a small bowl, combine the rum, honey and cinnamon; set aside.
Cut bananas in half lengthwise, leaving the peel on.
Place bananas cut side down on the grill.
Cover and grill over medium heat for 3 minutes.
Turn and brush with honey mixture.
Cover and grill 5-6 minutes longer or until tender.
Serve immediately with low fat ice cream.
Makes: 4 servings
Serving size: 1/2 banana with 1/2 cup ice cream
