Texas Quick Skillet


1 1/2 lbs lean ground sirloin or turkey
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1 (14.5 ounce) diced tomatoes in sauce
1/2 cup reduced- sodium tomato juice
2 tsp chili powder
1/2 tsp dried minced garlic
1 (15 ounce) can red kidney beans, rinsed and drained
2/3 cup uncooked minute rice


In a large skillet coated with olive oil flavored cooking spray, brown meat, onion and green pepper.
Add diced tomatoes, tomato juice, chili seasoning, garlic and kidney beans. Mix well to combine.
Stir in uncooked instant rice. Lower heat, cover and simmer for 5 minutes.

Makes: 6 servings
Serving size: about 1 1/2 cups
