I love collard and mustard greens, BUT I usually season them with bacon grease. I want to season them with something healthier, without losing all of the flavor.

BlueToBlue 07-25-2006, 03:34 AM I've never cooked collard greens (SO won't eat them), but I have had success seasoning chard and kale with vinegar, worcestorshire sauce, sea salt, pepper and garlic. I saute the greens in a little bit of olive oil, then add the rest of the seasonings. These seasonings are all pretty much calorie free, so I don't really track how much I use. I probably start with a tablespoon of both the vinegar and the worcestorshire sauce and a teaspoon of minced garlic, simmer it until the liquid is absorb and taste to see if I think it needs more.
