Spanish Rice
1 V & 1 S
Makes 4 servings

1 1/3 C water
1/2 Med green pepper diced
1/2 diced white or yellow onion
1/2 rib celery. diced
1/4 t morton lite salt
2 small tomatos chopped
2/3 C uncooked brown or white rice
1/4 t chili powder
dash pepper
dash hot sauce

In a med saucepan, combine water, green pepper, onion celery, and salt. Bring to a boil. Then reduce heat and cover. Simmer for 5 mins.

Stir in tomatoes, rice, chili powder, pepper, and hot sauce. Return to boil Reduce heat to low; cover and simmer approximately 20 mins, or until liquid is absorbed.
