I have 2 recipes that were requested on the laathome website...not sure who they belong to, but here they are (and they sound yummy!)

Recipe Name: Burger Stroganoff

Ingredients:

1 lb lean ground beef (at least 90 to 95% lean), or 1 ½ lbs lean ground turkey breast
1 medium onion, chopped
1 can (10 ¾ oz) condensed cream of mushroom soup, reduced-fat, reduced-sodium
1 cup sliced mushrooms, cooked
1 Tablespoon Worcestershire sauce
½ cup reduced-fat sour cream
1 ½ cups cooked noodles

Preparation:

Crumble ground beef in a 3 QT glass casserole dish. Add onion. Cover and microwave 5 to 7 minutes or until cooked. Stir once during cooking. Drain and crumble.
Stir in soup, mushrooms, 2 tablespoons water, and Worcestershire sauce. Cover and microwave 3 to 5 minutes or until bubbly. Stir once during cooking. Stir in sour cream. Microwave 1 to 2 minutes. Stir, cover and let stand 5 minutes before serving.
Serve over hot cooked noodles.

Makes: 4 servings

Recipe Name: Pink Salad

Ingredients:
1 (16 oz) container 1% cottage cheese
1 (8 oz) container fat-free Cool Whip®
1 pkg sugar-free strawberry or cherry gelatin
1 (8 oz) can crushed pineapple, drained well
3 medium bananas, sliced
¼ cup chopped walnuts (optional)

Preparation:
Mix cottage cheese with packet of gelatin powder. Add pineapple and then fold in bananas.
Next, fold in Cool Whip. Sprinkle with nuts.
Serve or refrigerate until ready to use.

Makes: 8 servings
