This recipe is super easy.

"Canoa" Canoe:

1 whole yellow plantain(small)
6 oz lean ground beef (seasoned at your own taste)
2 oz of low fat cheese

Pre heat the oven at 350º. DON'T peel the plantain. Made a cut in the plantain in a vertical way, like when you are going to open a bake potato.Put the plantain in the oven in a baking dish. Leave it like for 20 minutes or until is tender, try not to overcooked it. Cook the meat at your own taste. When the meat is ready stuffed the plantain with the meat, is gonna look like a canoe, and top it with the cheese, put it in the oven until the cheese melt. I hope you enjoy it.

Whole plantain 3 fruits, 1 protein and 1 dairy
