Here is another one that looks good.....

Spanish Shrimp

RECALCULATE SERVINGS
PREP TIME: 10 Minutes
COURSE: Dinner

INGREDIENTS
1 Pkg. UNCLE BEN'S FLAVORFUL® Spanish Rice
1 1/2 cups water
2 Tbsp. olive oil
1 Tbsp. capers
1/2 cup artichokes, drained, quartered
1/2 cup onion, sliced
1/2 cup red bell pepper, sliced
1 lb. shrimp, peeled, de-veined

INSTRUCTIONS
1. In skillet with lid, heat oil and sauté peppers and onions for 1 minute.
2. Add rice, water; bring to boil. Cover, reduce heat to medium low.
3. Simmer 5 minutes. Add shrimp, capers, artichokes. Re-cover, cook 5 to 7 minutes or until liquid is absorbed.
