Spinich Casserole
2 (10ounce) packages frozen chopped spinach (thawed and drained)
1 (8 ounce) package cream cheese (softened- I put in microwave for 30 seconds)
1/2 cup grated parmesan (I use block and grate my own)
1/4 cup of milk or cream

1-- Preheat oven to *350 F (175 C)
2-- In a mixing bowl, combine cream cheese and milk with a mixer until smooth. Add spinach and mix together with a spoon. Spoon into a small/medium casserole dish and sprinkle with parmesan cheese all over the top. Bake in preheated oven for 20 minutes.

Total carbs for entire recipe is 26g. Serves approx. 4 which is 6.5g per servings. This is a generous carb count since the cream cheese is counted as 1g per oz, but it is actually less than 1g per ounce. So enjoy. Perfect for the evening vegetable when you get tired of the same ole' same ole'.

I made this and it was terrible......i wonder what i did wrong. It tasted like cream cheese and that was it :(
I'm trying again.

I love the idea of cream cheese, but if that is too 'creamy' for you, why don't you try mixing it with half the cream cheese and add one cup of cottage cheese. The 3FC recipe for spinach casserole is 2 cups of cottage cheese, so maybe a halfsie will work!

I make my own with

2 packs of spinach
2 cups of cottage cheese
2 eggs
4 oz crumbled feta
1/2 cup parmesan
pepper, to taste

mix it up and bake it at 350 for about 30 minutes, or until bubbly on the edges.

We LOVE this! I was asked to bring it for Thanksgiving dinner this year (it looks great too):

** Spinach Casserole - 2pts **

2 pkgs frozen chopped spinach

2 cups fat free cottage cheese (6 points)

1/2 cup egg substitute (equal to 2 eggs) (2 points)

1/2 cup fat free parmesan cheese (2 points)

Optional: 2 cups sliced mushrooms (I don't use)


Cook spinach until heated through.

Drain very thoroughly, pressing into a colander or squeezing out the excess water.

(Sauté mushrooms using cooking spray and/or butter spray.)

Combine the cottage cheese, egg substitute, and parmesan cheese in bowl.

Mix in spinach.

Pour into a 9 inch pie pan or into 6 individual baking dishes which have been sprayed with nonstick spray.

Sprinkle casserole with a little parmesan and paprika.

Bake at 375* for 25 to 30 minutes, or until firm and lightly browned at the edges.

Serves 6
(107 cal and 0 grams of fat per serving - fiber not listed)

***individual servings of this casserole can be frozen & reheated in the microwave.

Total of 10 points. I rounded it up to 12.

I never thought of mushrooms, I bet that is good! Another thing that might work is some julienned yellow squash. I bet that would brighten it up nice and be a good texture.
