Now that you've read the title and are drooling, here is the recipe.
1 cup whole wheat flour
1 cup oats
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup SB friendly margarine, softened
1/2 cup SB friendly peanut butter (chunky or smooth)
1/2 cup brown sugar .. Use SB replacement posted below
1/2 cup granular splenda
1 egg or equivalent
1 and 1/2 teaspoon vanilla
1 300g bag semisweet chocolate chips
Directions:
~Preheat oven to 375 F
~Mix flour, oats, baking soda, powder, and salt in a small bowl.
~Beat margarine, peanut butter, "brown sugar", and splenda in a large bowl with a mixer on medium until it is fluffy.
~Add egg and vanilla, mix.
~Add flour mixture slowly until it is blended. Stir in the chocolate chips.
~Bake on an ungreased cookie sheet for about 10 minutes or until lightly browned. Cool and enjoy!
The batter is kind of runny and sticky, not really like regular cookie dough but they do bake up very nicely and look/ taste like cookies. If you store them in a sealed container they stay soft
"Brown Sugar"
1 cup granular splenda
1/4 cup sugar free maple syrup
Mix! This makes 1/4 cup, which is equal to 1 cup of regular brown sugar... soo... make half a batch of this to replace the 1/2 cup brown sugar.
This recipe makes 30 cookies, 2 to a serving. I tend to halve the batch and make 15.
