8 oz. hot Italian Sausage, removed from casings
1 med. zucchini, thinly sliced
1 large red or green pepper, diced
8 large eggs
4 oz mozzarella cheese, shredded

1. Spray a pan with nonstick spray, add sausage and cook over med heat, breaking up the chunks while cooking, cook til it is no longer pink

2. Add zucchini and bell pepper and saute 5 mnutes or until veggies are tender

3. Whisk eggs in a large bowl, then stir in cheese. Pour over sausage mixture in skilled and stir gently to distribute eggs evenly.

4. heat broiler. Cook frittata 4-6 minutes until set on bottom and sides (eggs will be runny in the center)

TIP: If the handle of your skillet is plastic or wood, wrap it in a doulbe layer of foil to protect it from scorching under the broiler.
