South Beach Diet - Phase I Start - May 1

We are picky eatters so cooking is always a challenge.
My fiance won't eat mushrooms or spinach. I hate asparagus, cauliflower and can't eat too many veggies anyway without meat or my tummy rebels. We both hate tofu. Basically we are left with brocolli, tomatoes, cabbage, artichokes and maybe a few other things that we will both eat and are allowed on South Beach.
questions:
1) Anyone have a recipe for dipping artichokes that's ok on phase 1 that isn't too garlicky or too sour I'm thinking this might be a good snacky chips alternative.
2) Oh and I never see Avacados on any list good or bad, but do see them mentioned in South beach recipes. Are they ok or not? What about Bok Choy? Bean Sprouts? Bamboo Shoots?
3) Is there a better list than the one in the book that covers more stuff, like would answer my question above?

I scanned it quickly and saw bok choy and bean sprouts. Avocados are considered a fat/oil and have a limit. I didn't see bamboo anywhere.
I don't have any artichokes recipes...I don't like them (I'm a picky eater too!)

I looked up the nutritional info for bamboo shoots, they have practically no calories and 2 carbs for a whole cup of them, so I think they would be fine for Phase I. I would say they are probably most similar to asparagus, which is fine. May I ask how you usually cook them? I went to China for 6 weeks and I LOVE them but have no idea how to cook them.

Try this recipe! You can dip the veggies you DO like into the dip.
HOT ARTICHOKE DIP
1 14-oz. can artichoke hearts, coarsely chopped
1 C. LF parmesan cheese
1 8-oz. pkg. LF cream cheese, room temperature
1/2 C. LF mayonnaise
1/2 t. garlic, minced
1 t. chives, chopped
1/2 t. parsley
1 t. lemon juice (only if you're on Ph2)
Heat oven to 400° degrees. Combine all ingredients and put into 10" pie plate or small low casserole dish. Bake until puffy, hot and bubbly, about 30 minutes.

Well, I was thinking of doing a stir-fry with bok choy, bamboo, water chestnuts, sprouts brocoli and snow peas with some chicken breast for dinner one night this week. I've only ever stir fried them.

I am a Re-start of Phase 1 .
Today:
Breakfast: 2 hard boiled eggs
Snack: 1 mozzerella stick and a couple of almonds
Lunch: leftover grilled lemon pepper chicken cut up on salad mix w/onions and mozzerella cheese!
snack: Coffee, one cheese stick
dinner: Roasted Vegetables (from the book) but I add cauliflower which is AWESOME in it. a few more nuts. sugar free jello.
I didn't have any meat at dinner because I worked thru dinner and ate the veggies and another cheese stick and was full.
Thinking of having the ricotta cheese for my bed time snack!
So far day 1 was good for me!

well, here was my day, it might look a little odd because I was out of just about ALL food except chicken and broccoli.
breakfast: grilled chicken in wing sauce
lunch: grilled chicken in wing sauce
Dinner: Grilled chicken and broccoli/teriyaki
blech! Can't wait for tomorrow because we got some groceries tonight! Thank god!

Here was my Day 1 and plan for Day 2. Have to admit that I love most veggies though....SBD is the perfect diet for me, so why didn't I stay with it before?
Day 1:
B: Eggbeaters scrambled with ham and fresh green beans
Snack 1: string cheese
L: spinach salad with zucchini, cheese, broccoli, and viniagrette. Plus more zucchini and some tuna salad.
Snack 2: string cheese, SF fudgsicle
Dinner: Assorted salads at church dinner. Bite of brownie. :(
Day 2:
B: Ham, cheese, and eggs scrambled
Snack 1: cottage cheese, walnuts
Lunch: "Philly Cheesesteak" veggie burger, black-eyed peas, spinach
Snack 2: rest of cottage cheese, probably
Dinner: Parmesan tilapia, steamed green beans, sauteed zucchini
Dessert: SF Fudgsicle

PS Weezle, I am going to have to make that tip for this weekend. I LOOOOVE artichoke dip and my best friend is coming in this weekend...usually we eat a bunch of crap together so I hope she is understanding about eating veggies instead!!!

Here's what I'm having today:
B: "Sausage" patty, bean muffin with ICBINB spray
S: peanuts
L: Tomato Basil "Burger" with LF cheese, mushrooms and hummus
S: LF cheese stick
D: Philly Cheese Steak "Burger" with cheese, cooked mushrooms and green peppers (I had it last night too and it was SO good,) salad with SF dressing, LF cottage cheese.
S: Peanut butter cup (frozen)
So far, so good! A little icky, otherwise ok. Good luck chicks!

I made the boo boo today. I got up and needed to clean house and do laundry and I got SO into it I totally forgot to eat. Oops. I did have a good dinner and didn't mess up. I also made some splenda jello for tomorrow (I'm allergic to regular sugar free jello).
I need to force myself to have breakfast before I get action packed tomorrow!

OK, here's the meal plan for today.
B: "Dreamsicle" shake (lots of protein..but next time I will skip the cottage cheese, it's hard to drink cottage cheese!)
Snack: string cheese
Lunch: Taco Bake!!! YUM!
Snack: None, I am going to the dentist! Maybe a SF Popsicle when I get home.
Dinner: Turkey cutlets with a spice rub, zucchini, salad with caesar dessing and parmesan cheese.
Snack: Pecans

HOw do I find Peanut Butter Cup? That sounds dangerous!!
Breakfast: hard boiled egg, coffee w/equal and milk.
Lunch we are going to a friends house and I'm bringing my SB friendly stuff. She just told me she made baked potato soup yesterday and other leftovers (we just each get out the leftovers kind of thing for us and our kids) so I WILL NOT BE EATING that soup!
Dinner is a pitch-in where I'm bringing the salad, green and a friend is bringing fruit salad. so If I eat some of the fruit it will be better than if I ate a dessert item.
snacks: nuts and coffee and low fat cheese stick :carrot:
Exercise: bike riding!! I can now take DD on the bike with me, it is SO FUN.

Debbie, The peanut butter cup is:
Mash a SF Fudgsicle together with some peanut butter, mix well, and freeze. The only problem is waiting until it's frozen again to eat it!!!

OK So I added some broccoli and spinach to the menu yesterday. I needed to add some veggies anyway. I'm going to have to hit the grocery store again this weekend for more veggies because I'm going to run out! I may have to get some frozen ones so I can make a casserole or something that will last.
Today, the menu is as follows:
B: "Bacon" strips, bean muffin with ICBINB spray
S: peanuts
L: "Burger" with LF cheese, mustard, LF mayo, lettuce, possibly tomato. Veggies and hummus.
S: LF Cheese stick
D: Taco salad with Boca ground, salsa, lettuce, beans, FF cheese, and FF sour cream. Some sort of veggie (broccoli, peppers, green beans, I just can't decide.)
S: Frozen peanut butter cup. (this really saves me.)
It doesn't look like I get a lot all my veggies in, but when I have a veggie as a "side dish," I go all out.

I'm brewing up some VERY strong coffee to mix with splenda and plain yogurt for breakfast/ dessert yogurt. Ok it's actually lunch time, but it;'s breakfast to me!
I'll probably have some cheese and V8 for a snack and I am meeting a friend for dinner at a place I can get lean meat and steamed veggies.
Planning on working out after dinner has settled.

Okay, can I join this thread? I know ya'll have started earlier in the week and I plan to start back tomorrow. I was one of those Post Easter Phase oners, but something happened. I have to start back the way I was mid-March. I was really on a roll.
I will start posting my meals or try to link to my fitday. I'm not asking ya'll to read them, but it will make me feel more accountable. I worked out more than I ever have last month because I knew that I had a goal and had to post them here.
Debbie: The frozen peanut butter cup is something I look forward to on every OP day. I don't wait for them to refreeze, I just mash the pb and the fudgecicle together with a fork and then stir in 2 TB of Lite Cool Whip. Excellente! Oh and I meant to comment on your BSF. I started out in that this year and loved it! I stopped when I got a PT job in January and I really miss it. Genesis is very interesting!
Hi Weezle! I'm considering going to a Reliant K concert this month. I'm sure that will be a good one. We have an amusement park close to us and have yearly passes. They have some really good Christian concerts there. I've seen David Crowder Band, Michael W. Smith and Mercy Me (twice, very awesome if you get a chance to see them.) I also envy you. I love volleyball, but there is nowhere to play around here.

Want: I love Mercy Me. I can't wait until Third Day comes back around though. I saw them once before they got really popular, and they're probably my favorite with Casting Crowns a close second.

Well, it's day 4 for me and I have yet to experience the SB Flu symptoms! this is very happy! I have been trying to get in dairy, although not the beans as much. Maybe I should make some for dinner, I know I have some kind of white or pinto beans in the cupboard. My best friend is here and I don't want to scare her with what I am eating right now, but she does know that I am on SB. We went to lunch at Atlanta Bread Co and I had french onion soup--hmm, probably not allowed, but oh well--and caesar salad. No croutons. No nothing. As well behaved as I am gonna get!

flavored coffee/teas really help my cravings! bigelow makes peppermint, french vanilla, raspberry and vanilla caramel and you just add a bit of coffee mate and a splenda and you have a sweet treat :)

I promise I am not a scale addict, I don't even HAVE one at home, but if I can make it to work without eating I like to weigh, and I have lost FIVE pounds this week already! Hooray for phase 1!! (Keep in mind that I have a lot more to lose than some of you!!!!)
