Default Sweet Potato Fries

I love my sweet potato fries so much that I'm compelled to share the recipe. I hope you like them as much as I do!

Ingredients:

1 Sweet potato
1 Splash olive oil
Cajun seasoning
Kosher salt
Pepper


Directions:

Preheat oven to 400F.

Wash and dry sweet potato. Slice into 1/4" circles (you may cut circles in half to make half-moons if the diameter is large), and place in a gallon Ziploc bag. Add a splash of olive oil and seasonings - which you can vary to suit your tastes - seal bag and shake well to coat.

Spread sweet potato slices onto a well-greased baking sheet (I use Mazola pan-spray). Bake at 400 degrees Farenheit for 20 minutes, then flip slices over. Bake for 10 additional minutes or until golden brown with crispy edges. Watch carefully during the last 10 minutes so as not to burn (very important!)

Serve with ketchup - yum!
