Veggie Challenged - I have a brain in the fridge!

I have a giant celeriac (celery root) in the fridge that came in my organic box. (We order a box every two weeks and it's pot luck what you get) Now in my previous eating life I would have mashed it with potato, cream and butter, of course this is not an option. :D
I don't know what to do with the lovely thing, any ideas??

I think I've eaten it raw, like turnip. You could grate it into a salad ...

It's great cut up in stews or soups OR you can roast it with eggplant and make a dip (add lotsa garlic & some onion) - YUM!
You can also mash it with cauliflower to make celery-flavored faux mashed potatoes...

I love mashed celeriac. I just add some Smart Balance Buttery Spread these days instead of butter, plus a little salt and pepper. You could try cutting it into "fries" sprinkle with a little olive oil, salt & pepper and bake on a tray in the oven for 20 min. or so. I bet that would taste good - I might give it a try myself. I like most vegetables when they're roasted :T.
