Smile Modified Chicken Capri

I love Chicken Capri, but I am impatient. I made this when I was too short on time to make it. It doesn't have the ricotta, but I think it's almost as good.

Boneless Skinless Chicken Breasts, seasoned with S/P & garlic powder
1 can diced tomatoes (garlic, onion, or whatever you like)
1/2 cup chopped onion
1 or 2 tablespoons Olive Oil
Mozzarella Cheese Slices
Fat-Free Parmesan Cheese (optional)

Cook chicken breasts on Foreman grill, or saute in pan until done. While the chicken is cooking, heat the olive oil in a skillet. Add onions and let cook until the onions start to brown; add tomatoes (don't drain). Bring to a boil and reduce heat to medium. Cook until there is very little liquid. Add a little bit of Parmesan if desired.

To serve, just put some tomato mixture on top of chicken, and put a slice of Mozzarella on top and enjoy!!!

You can easily make this in a variety of serving sizes. I made 2 chicken breasts tonight, and of course I had a lot of tomato mixture to top it. You could stretch the tomatoes to top more chicken if you have more people to feed. I also spice up the tomatoes with garlic powder and pepper, depending on the flavor of tomatoes I buy. Hope you like this as much as I do.
