Torta Di Carote
I was skeptical but this came out so delish! One of the best desserts ever. I changed some of the ingredients from the original recipe.
-2 carrots, finely grated or use the S blade in your food processor
-3 eggs, separated
-1 C finely ground nuts (I used almond flour)
-1 T egg beaters (optional)
-1 1/2 tsp cinnamon
-1 1/2 tsp apple pie spice
-1 Tbl vanilla
-pinch of salt
-1 C splenda
Mix all ingredients except egg whites very well. Beat egg whites until firm peaks appear. Fold into carrot mixture very gently but throughly. Bake in a 9 inch nonstick pan (I sprayed w/ Pam too) for 30 min at 375. Enjoy when cool!
