Yeah, I do mean "grate", even though the bread is "great" as well.
1 and 1/2 cups white flour
1/2 cup whole wheat flour
1 cup rolled oats
1/2 cup sugar
2 tsp baking powder
2 tsp cinnamon
1/4 tsp nutmeg
1/2 cup skim milk or soy milk
1 Tbsp oil
4 egg whites (or a half cup substitute)
1/3 cup + 1 Tbsp applesause
2 tsp vanilla
2 cups peeled, grated apples
1/2 cup carrot, grated
1/3 cup zuchinni or coconut, grated (both are optional)
Preheat oven to 350. Combine flours, oats, sugar, baking powder, cinnamon, and nutmeg in a large bowl. Set aside. Combine milk, eggs, oil, applesauce, vanilla and beat until well mixed. Stir in all of the grated ingredients. Add contents of medium bowl to the dry ingredients and stir until fully mixed. Pour into an 8"x4" baking pan sprayed with non-stick spray. Bake for one hour. Let cool for at least 10 minutes in pan.
