I haven't tried these yet, but they sound good for only 1 point! I wonder how big they are. I originally indicated too high a point value; these are actually 1 point each or 2 for 3 points. I was unable to edit the topic heading to reflect the correct Point value --sorry.

Kashi Friendly Fiber Muffins

1 cup whole wheat flour
2 t baking powder
1/2 t salt
1 3/4 cups KashiŪ Good Friends cereal
3/4 cup skim milk -- rice or soy milk
1/4 cup honey
2 egg whites
1/4 cup unsweetened apple sauce
1 medium ripe banana -- mashed
Non-stick cooking spray

Preheat oven to 400°F

In a small bowl, stir together flour, baking powder and salt. Set aside. In a large mixing bowl, combine Kashi Good Friends cereal and milk and let stand for 2-3 minutes. Add the egg whites and beat well. Stir in apple sauce, banana and honey. Add flour mixture and mix only until dry ingredients are moistened (over-mixing will produce rubbery muffins).

Fill sprayed muffin tins. Bake for 20-25 minutes or until lightly browned.

I made these just the other day. I had to eat two of them for breakfast to get full. The muffins are very dense. They are a great little snack. I took them to work and would have one when I got hungry in between meals. I even added just a few raisins and it kept the same point count. I'm ready to make more just talking about them. Enjoy!!!

I made these muffins this morning. I would consider them a "medium size" homemade muffin. They are definitely "high-fiber-tasting" -- if you know what I mean. My kids definitely wouldn't go for them, but I find them an acceptable choice. Not something that I would rave about, but I'll most likely make them again whenever I'm on a strict "point budget".

Don't forget to count them as 3 points if you eat 2 muffins :-)

Just bringing this thread back up since we've been discussing low point muffins in the WW General area. Note that these muffins are 1 point each (not 2). I was unable to edit the title -- sorry.

I guess that it's time for me to make up a batch of these since my freezer stash is gone.

Actually, I just brought this recipe back up because I referred to it on another thread (the one about how to count high fiber foods).

I count these muffins as 1 pt each -- I made a mistake in the title an was unable to edit it -- of course it does have almost 2 cups of Kashi in a 12 serving recipe

I really enjoy these muffins when I split then in half and pop into the toaster oven and toast lightly. I spread a little s/f jelly on each half. Yummy!!!

Hi everybody: Here's a really great recipe for Muffins. I got it from, "Taste of Home" magazine, April/May issue. I made them up and had some WW buddies over for tea and they liked them too. I worked out the points as 67 points for the entire recipe, if I am wrong please let me know:

MORNING GLORY MUFFINS
1 cup whole wheat flour
3/4 cup sugar
1/2 cup oat bran
1/2 cup all-purpose flour
2 tsp. baking soda
1/2 tsp salt
3 Eggs
3/4 cup applesauce
1/4 cup vegetable oil
1/4 cup molasses
2 tsp. vanilla extract
1/4 tsp orange extract
1/2 cup raisins
1/2 cup chopped walnuts
1/2 cup flaked coconut
2 cups grated carrots
1 medium tart apple peeled and finely chopped

In a large bowl, combine the dry ingredients. In a smaller bow combine, eggs, applesauce, oil, molasses and extracts; mix well. Sir into the dry ingredients just until moistened. Fold in carrots, raisins, walnuts, coconut and apple. Fill greased or paper-lined muffin cups three-fourths full. Bake 350 for 20-30 minutes or until toothpick comes out clean. Cool for 5 min. before removing from pans to wire racks. Yield about 18 muffins.

NOTE I didn't chop the apple too fine, or grate the carrots on the really fine part of the grater so maybe thats why I ended up with 20 large muffins.
