Hi everybody: Here's a really great recipe for Muffins. I got it from, "Taste of Home" magazine, April/May issue. I made them up and had some WW buddies over for tea and they liked them too. I worked out the points as 67 points for the entire recipe, if I am wrong please let me know:
MORNING GLORY MUFFINS
1 cup whole wheat flour
3/4 cup sugar
1/2 cup oat bran
1/2 cup all-purpose flour
2 tsp. baking soda
1/2 tsp salt
3 Eggs
3/4 cup applesauce
1/4 cup vegetable oil
1/4 cup molasses
2 tsp. vanilla extract
1/4 tsp orange extract
1/2 cup raisins
1/2 cup chopped walnuts
1/2 cup flaked coconut
2 cups grated carrots
1 medium tart apple peeled and finely chopped
In a large bowl, combine the dry ingredients. In a smaller bow combine, eggs, applesauce, oil, molasses and extracts; mix well. Sir into the dry ingredients just until moistened. Fold in carrots, raisins, walnuts, coconut and apple. Fill greased or paper-lined muffin cups three-fourths full. Bake 350 for 20-30 minutes or until toothpick comes out clean. Cool for 5 min. before removing from pans to wire racks. Yield about 18 muffins.
NOTE I didn't chop the apple too fine, or grate the carrots on the really fine part of the grater so maybe thats why I ended up with 20 large muffins.
