I've got a recipe for lowfat creamed chicken, but I'm having trouble figuring out what to put it on. Biscuits can be so high in calories and mashed potatoes would be good but a little too heavy. So does anyone have any suggestions on something good I can put the creamed chicken over? Something that's not going to bust my calorie budget?

I was thinking maybe a couple of pieces of toast using low calorie bread. But I wanted to see if any of you had yummy ideas.

Hey, that's a good idea. I love those Thomas' whole wheat muffins, they're great. Thanks :)

The recipe is really very simple. Normally with creamed chicken, you'd have to butter and flour and all that fun fattening stuff. But what I do is cut up a chicken breast and cook it in fat-free cooking spray with some onions. I usually add a small can of mushrooms as well. Then I mix together a can of lowfat/low sodium cream of chicken soup and 1/2 cup fat-free sour cream. Then I dump it in with the chicken, onions and mushrooms and let it simmer for a little while. It's really good without having to use butter and flour. I'll also sometimes throw in some pimentos if I've got them around. Plus you can add your own spices, if you want them, to taste. I usually just sprinkle in a little bit of pepper.

Try it, it's yummy!
