Default eggs vs egg beaters

I am new to South Beach Diet. Really new. Anyway, I'm reading the book and he says whole eggs are ok because the yolks have good junk in them and whatnot, but almost every egg recipe in the book calls for egg beaters...so should I not be eating yolks? I usually have one whole egg and one egg white, before South Beach anyway, so should I stick with that?

futurecfo! hmmmm, I looked at the recipes in my book and it features recipes using both whole eggs and substitutes. Doing what you have been doing falls within the guidelines for Phase 1 so enjoy your blend of egg a whole egg and egg white.
