Potato and Leek Soup
2-3 servings
1-2 leeks
1 onion
1 tbspn butter or olive oil
2 cups diced potatoes
1 cup low-fat milk
2 cups water
salt and pepper
Method
sautee onion and leek in oil
add skim milk while stirring constantly
when mixture thickens add potatoes, stir
add water, salt and pepper to taste
bring to boil then reduce and allow to simmer for 20 minutes
stir occasionally
when ready, puree mixture in a blender
serve with warm crusty bread roll
hint - you may also sprinkle a tbspn of grated lo-fat cheese over soup just before serving.
