Cheeseburger Soup 2 (cut and pasted from debkay's recipe, then altered a bit ;) )

1 blob of butter
1 clove garlic, minced
1/2 green pepper chopped
1 medium onion, chopped
2 stalk celery, sliced
8-12 oz ground beef
1 cup chicken or beef broth....which ever you prefer
1 cup half and half
4-6 oz sharp cheddar cheese, grated
That is the basic recipe I use, then to spice it up a bit .....

I also add
1 tsp or tbsp liquid smoke (when I remember to pick up bbq sauce, I'll add 2 tbsp of that too) :T
4 slices crumbled cooked bacon, or a tbsp hormel bacon bits
1 cup mushrooms (prefried in butter or canned stuff)
a couple shakes of dried tyme, salt and pepper. Not too much salt tho, the cheese adds alot, but I use sodium free broth.

Heat butter in a soup pot. Saute garlic, onion, celery and green pepper until tender. Add the meat and brown, drain. Add broth then slowly
add the 1/2 & 1/2, stirring constantly, but do not let it boil ( the cream will curdle if allowed to boil.) Add the cheese. Stir until melted and serve.

This is very very filling, and has alot of calories, BUT when you are trying to get enough calories in for your day, this works perfect. This stuff fills me up for hours!

let's say I'm too lazy to go add this up at fitday....do you have a guesstimate as to how many carbs are in this??
