Default Yet another newbie (with vegetarian questions)

Hi, guys! DH & I just started P1 today, and I guess my biggest questions are about vegetarian substitutions. I saw the latest P1 food list and its meat substitutes, but I was wondering if the recommended portion size is per meal or per day. I'm just generally confused about portions because the meal plans in the book seem to give portion recommendations but then say that there's no real calorie counting and you should eat till you're not hungry. Clearly I'm not out to overdo it, but I want to be sure I don't inadvertently eat too much of the meat subs, as I'm a veggie. DH eats chicken, turkey, and fish, so I'm okay with figuring his meals out.

Sorry if I've missed the answers to these questions posted elsewhere...I've looked as best as I can!

Hmm, a little about us: I've got about 15-20 lbs to lose, am a regular exerciser, and recently dropped 50+ lbs on WW (lbs I managed to pack on post-college). I need to revamp my food choices, though. We moved to TX 6 months ago, and my eating has taken a turn for the worse since vegetarian options aren't so plentiful around here as they were in CA (where we lived before). DH needs to lose about 30 lbs, and while he goes in spurts of exercising, he needs to make it a regular habit. He works from home and doesn't move around much. We have 2 adorable kids, 2 dogs, and 2 cats!

I'm not a trend diet person, but decided to join DH on this as I think it will do him a world of good, and it can't hurt me, right?

The amounts listed are portions per meal except where otherwise noted as In the Dairy section which is per day. Nuts are restricted to one serving per day.
