Easy Cheesy Broccoli Quiche

10 ounces chopped broccoli, cooked and well drained
8 ounces cabot 50% lowfat cheddar cheese, shredded
1 1/2 cups cheddar and chive egg beaters
1 small onion, chopped finely
1 cup fat free or 1% milk
1 tsp. salt
Dash pepper

Spray a 9 inch glass pie plate with non stick spray. In the bottom of the pan put the broccoli, then the cheese and the onion. In a separate bowl, mix the egg beaters, salt, pepper and milk. Pour over the broccoli,cheese and onion mixture. Bake at 350 degrees for about 35-45 minutes or until a knife inserted into the center comes out clean. Remove from oven and let sit for 5-10 minutes. Serve.

I tried this recipe and I love it. Considering I hate eggs, that is pretty good :) Although I did not do an exact calorie count for this recipe each serving is roughly 250 calories.

This is great served with a big fluffy salad as a side dish.

Makes 4 big servings
