Appetizers and Beverages - Herbed Spinach Balls and Sausage-Filled Stars

I thought I'd share these recipes since I thought they might make good low-fat appetizers for the holidays. I got these 2 recipes off the local news website and the anchors said they were very good, especially the Herbed Spinach Balls (which just happens to be a WW recipe). The amount per serving is not listed so I'm just assuming one appetizer per serving. I'm sorry I don't have the nutritional value but if someone could input into Mastercook that would be great.

Herbed Spinach Balls
(makes 30 balls or 30 servings)
1 10-oz. pkg frozen chopped spinach, thawed and well drained (about 1 cup)
1/2 cup finely chopped onion
1 egg, beaten
2 tbsp. tub margarine, melted
1/3 cup plain dried breadcrumbs
2 tbsp grated Parmesan cheese
1/4 tsp each garlic powder, thyme leaves, rubbed sage, salt
dash pepper

Preheat oven to 350 degrees. In medium mixing bowl combine spinach, onion, egg and margarine, mixing well. Add remaining ingredients and mix till thoroughly combined. Shape spinach mixture into balls about the size of a walnut. Spray baking sheet with nonstick cooking spray; arrange balls on sheet. Bake until balls are cooked through and lightly browned, about 15-20 minutes.

Sausage-Filled Stars
(4 dozen or 48 servings)
1 lb. bulk low-fat turkey sausage
1 1/2 cups (6 oz) shredded cheddar cheese, reduced fat
1 1/2 cups (6 oz) shredded Monterey Jack cheese, reduced fat
1 medium sweet red pepper, diced
1 medium green pepper, diced
1 can (4 oz) chopped green chilies, drained
1 can (4 1/2 oz) chopped ripe olive, drained
1 envelope ranch salad mix
48 wonton wrappers
vegetable cooking spray

In a skillet, cook sausage until no longer pink; blot on paper toweling, rinse and drain well. Add cheeses, peppers, chilies, and olives; add dressing mix; mix well. Set aside. Brush one side of each wonton with vegetable cooking spray; press sprayed side down onto the bottom and sides of a muffin pan. Bake at 350 degrees for 5 minutes or until golden brown. Transfer to a baking sheet. Fill each with about 2 tbsp. of the sausage mixture. Bake for 5 minutes or until heated through. Serve warm.
