Anyone know any good late night snacks? PrettyBunny 07-26-2005, 12:21 AM I usually enjoy late night snacks such as a no sugar added fudgsicle and 1 tbsp. all natural peanut butter or a milkshake, which I've posted below. I may also have a wedge of Laughing Cow Cheese with fresh cucumbers (or any other veggies) or I may have a Dannon non-fat plain yogurt mixed with cocoa powder and Splenda or sugar free syrup or cinnamon. If you're in phase 2, you could have half an english muffin with 1 tbsp. all natural peanut butter and 1. tbsp. sugar free jam or some air popped popcorn. I know for me personally, the milkshake really feels me up and keeps me satisfied. Hope this helps Chocolate Milkshake 1/2 tsp. vanilla extract 2 tsp. chocolate extract 1 cup low-fat milk 2 cups crushed ice Artificial sweetener to taste With Blender: Makes a frothy, thicker milk shake. In blender combine vanilla extract, chocolate extract, milk, ice and sweetener to reach the 3 cup mark. Blend low to medium speed for 1 to 2 minutes, or until ice is pulverized and mixture is thick and frothy. Without Blender: Combine all ingredients except crushed ice in glass. Stir well. If I am starving I will have some cucumbers and water! kyemom 07-26-2005, 09:39 AM I do a lot of the broiled LF cheese. KimberlyHeidi 07-26-2005, 10:59 AM You broil cheese and its good? kyemom 07-26-2005, 11:30 AM Oh my yes.....Take rf cheddar cheese, make it into little mounds on a cookie sheet. Then I broil it, let it melt good and start to get hard, then flip it over, and continue to broil until crispy (do not burn)....then eat them in place of chips or crackers....I have always loved the cheese that melts off of pizza or whatever and gets crispy.....SO YUMMY!!!!!!!!!!!!!!!!!
