Side Dishes - Phase 1 - Twice Grilled Eggplant rollups (or casserole)

-One eggplant
-ham or prosciutto slices
-fresh mozzarella, sliced thin
-salt and pepper
-olive oil

Cut off the end of the eggplant and slice lengthwise into 1/4 inch strips. Brush very lightly with olive oil. Sprinkle with basil, salt and pepper on both sides. Grill (or broil) until slightly underdone. Take off grill and let cool. To each slice add one slice of ham, and a thin slice of cheese, sprinkle with more basil if desired. Starting at the end roll up. Secure the ends with a tooth pick or put two skewers through the sides, this way you can stack several rolls on the same two skewers. Grill for a few more minutes until heated through. Serve immediately and enjoy.

**You can make a variation on this dish by layering the eggplant, ham, and cheese in a dish and baking instead of grilling a second time.
