Hello, I've never posted here before, but I've gained a ton of great recipes and thought you might like one more.

Skillet Zucchini
2 Tbsp. margarine
6 medium zucchini
1 onion
2 tomatoes
4 slices pre-cooked bacon
salt and pepper to taste
cup water (optional)
1 T soy sauce
2 T bread crumbs (approx. and if desired)
1/2 cup grated fat-free cheddar cheese
parmesan cheese

Melt butter in large skillet over medium-high heat. Saute onion. Add sliced zucchini, chunked tomatoes and bacon, salt, pepper and water. Cover and cook 10 minutes, stirring occasionally. Stir in soy sauce and bread crumbs. Top with cheddar cheese. Cover and cook 2 minutes more. Sprinkle servings with parmesan cheese.

I've also added sweet peppers and mushrooms to this. I find it gets very juicy, so if you have juicy tomatoes, leave out the water. If you do, you may also leave out the bread, as it is a thickener for the juice. This makes a lot of servings and I often eat it as a meal by itself, so I have a hard time calculating the servings and the points, but it's very low, maybe 2 pts per cup.

Here's a quick/easy/low calorie/fat way to enjoy zucchini

4 zucchini's, sliced, 0 pts.
1/2 red onion, sliced or cubed 0 pts.
1/4 cup tomato sauce...any type jar sauce or homemade sauce
(I use meatsauce) 1 pt.
1 tbsp. vegtable oil....or olive oil if you prefer 3 pts.

Place everything in corning ware type dish, mix well, cover with saran wrap
tightly...cook on high 20 minutes.

The entire dish is only 4 pts. ;)
