Default White Beans w/ cheese and basil

2 cans Cannellini or Great Northern Beans (liquid from one can reserved)
1 Tbs. Olive oil
2 tsp. finely chopped garlic
2 tsp. dried basil or 1 Tbs. fresh
1/4 C shredded parmesan cheese

Add all ingredients to a large bowl, including the liquid from just one of the cans. Use a heavy wooden spoon to mash beans and mix everything together. Personally I like to leave the beans slightly chunky but whatever your preference is OK. If you want a real smooth puree then use a blender or food processor. Pour the mix into a baking dish. Top with a little bit more cheese and sprinkle paprika on top. Bake until brown and bubbly. Let sit 5 min to set before serving.

After hating any kind of beans since childhood, this recipe made me experiment with more bean recipes. Now I love 'em. They're nature's perfect food! Hope you enjoy!
