Default Baked Oatmeal question

I guess this is for Vickie mainly ... I emailed my friend with your recipe about the baked oatmeal. She's wondering if it has to be the quick kind or regular kind. I told her I'd let her know tomorrow.

This really sounds like something I could do for work breakfasts if I could figure out a good method.

Kathy, I use regular oats unless the recipe specifies quick cooking oats.

Thanks very much! This is what I sent her:

Banana Baked Oatmeal

2 cups oatmeal dry
1 1/2 tsp baking powder
1 cup skim milk
½ cup Egg Beaters
1/2 cup unsweetened applesauce
1/4 cups Splenda
2 medium bananas, mashed
1 Tbsp cinnamon
1 tsp vanilla

Mix dry ingredients, then mix in wet ingredients.
Pour into a sprayed 8” square pan.
Bake at 350 degrees for 45 min.
Cut into 6 pieces.


So when you make this, do you use regular or quick -- or does it matter?

That sounds really good! Do you think I could use regular eggs instead of egg beaters?

When I made this ever so long ago, I remember using quick oats. It turned out fine. I think the texture would be a little chewier if you use the rolled oats, but quick work too, if I recall correctly.
