Default Menu for Wednesday, February 23, 2005

Breakfast: Oatmeal made with skim and one banana cooked in - You know...a banana muffin! What an imagination this girl has.

Lunch: Leftover Chicken Breast Toscana from the meal out when I didn't feel like cooking my Smothered Barley Chicken last night. I was too busy worrying about my big Sister.

Snack: Peach smoothie

Dinner: Smothered Barley Chicken, salad, green beans

Snack: Cheesecake pudding

Snack: all bran bar (points)
Supper: lean ham, salad, mixed veggies
Snack or dessert: sf/ff pudding with cool whip

L: tortilla wrap with turkey, tomato, bell pepper, Light Ruffles
Sn: Light string cheese
D: baked potato with FF cheese and sour cream

We're having a lunch at work today (Cajun theme) but I brought my own so I won't be eating a lot of bad stuff.

B: Puffed millet cereal w/FF milk
Diet V8 Splash
S: SF/FF yogurt w/SF apple cider drink powder mixed in. Nice change ... sort of like apple pie without the crust. I might use that SF apple cider mix as flavoring the next time I make one of the baked oatmeal dishes. Worth a try!
L: Wendy's side salad and small chili (points)
S: Applesauce and Wasa crackers w/Light LC cheese
D: Green salad
Broiled cube steak
Baked sweet potato
Green beans
S: SF jello w/fresh pineapple
FF/SF butterscotch pudding

count points for that (probably all 35 that I started over with today). I was at the grocery store, and there it was at the checkout calling my name!

BAD egg! Bad, bad, bad!!

I might as well have eaten one too. I decided to join in the lunch and so I ignored my lunch and ate a teeny bit of black beans/rice/smoked sausage, 2 boiled shrimp, 4 crackers with crab dip, and a teeny piece (probably 1" square) of cornbread. I drank milk with it, so that was good, but now I'm drinking an extra bottle of water to flush out all the salt.

You girls are so funny. I was good this afternoon and filled in my dinner menu for the week. I'm also going to make Froufie's "beef & barley and whatever else is in the crisper drawer" soup for lunches. I WILL be good, I WILL be good. I don't want to stall out this close to goal.

Does anyone have some kind of recipe or something to make a cheesecakey taste out of ff ricotta cheese? i thought a while ago i read somewher ein here what someone added to make it actually taste good thanks girls!

I think there's a recipe similar to that on our Core recipes board, under desserts. If not there, try Barbo's.

This one may fit the bill, although it uses ff cottage cheese instead of ricotta.

Core Lemon Cheese Cake - Posted by Sara and Gert Knute

1 box sugar free lemon Jello
1 cup hot water
16 ounces FF cottage cheese
1/2 cup skim milk
1 tsp. vanilla
1/4 tsp. salt
2 pkg. splenda or to your likeness. (I used 1/4 cup!)

Blend jello with water, then cheese, then rest of ingredients, (mix everything in food processor or with hand mixer). Pour into 9" pie pan and refrigerate. Put stewed peaches over the pie. FF Cool whip can also be added but will need to count points.

Breakfast: 4 oz ff/sf strawberry cheesecake yogurt, 1 banana, decaf w/light cream

Lunch: roast turkey, 1/2 sweet potato, steamed brocolli & carrots
1 tangerine

Snack: rice chips (pts) and salsa, diet pepper

Dinner: (came home very late from work and very tired!): 2 bowls of beef/barley/cabbage soup
1 apple

That should do it!!!
