Sounds fine to me. I use only 100% whole grain muffins, not the "light". Check the ingredients - they may have snuck in some enriched flour or sugar to make it "light".
Bananas are now allowed on Phase II and your breakfast sounds yummy!
I've looked at the Thomas' muffins and though they are called "Hearty Grain" they are made with enriched flour which is a no-no. Stay away from them and look for 100% whole wheat muffins.
