If anyone could answer either question I would appreciate it:
1) What is the nutritional information (calories, fat, carbs, protiein) of 5 lbs (with shell) boiled crawfish?
2) How many pounds of crawfish (with shell) does it take to render 1 pound of tail meat (peeled crawfish)?

I can't find an exact reference, but here are a few helpful quotes:
The champion crawfish eater of Louisiana, they report, is said to have consumed 30 pounds of crayfish, liveweight. That figures out to about five pounds of cooked crayfish meat.
As a general rule only, 12 medium-sized crayfish (six to seven inches long) are sufficient for one serving; one pound of crayfish; liveweight, is equal to one cup of meat, using tails and claws; and one cup of crawfish meat will usually serve from two to six, depending on the recipe and amount of other ingredients.
Live Crawfish are graded as follows:
Large: 15 or less per pound
Medium: 16 - 25 per pound
Small: 25 or more per pound
Although rich in flavor, crawfish boast lean levels of fat and calories, with 1 gram of fat and 77 calories in each 3 1/2 ounce portion of meat. The same serving has 15 grams of protein, 107 mg cholesterol, 62 mg sodium and .14 g omega-3 fatty acids.
So, you'd need 6 pounds of whole crawfish to equal 1 pound of meat. This would contain 346 calories and 4.5 grams fat. Not bad!
