Another great recipe from the Kraft website.

Two-Cheese Spaghetti Squash

1 medium spaghetti squash
1/2 cup shredded ff mozzrella cheese
2 tablespoons grated parmesan cheese
2 plum tomato
1/4 cup parsley -- chopped

Pierce squash in several place with fork. Microwave 10 minutes or til tender. Turning over after 5 minutes. Let stand 5 minutes. Cut squash in half. Remove and discard seeds. Use fork to scrape the insides to from strands. Toss squash strands with cheeses, tomato and parsley. Spoon into microwave bowl. Microwave on high 2 minutes.

Yield:
"1/2 cup"

Sounds delish. I was just going make fake spaghetti w/ my spaghetti squash I just bought, but I might do this instead! Thanks!

WOW!! i am NOT a spaghetti squash fan, but in an attempt to get more variety of veggies in, i tried this last night and it was DELICIOUS! even my 5 yr old son loved it and asked for more. that is a true testament.....lol

i definitely think using fresh parsley helps alot, as you can really taste it and it gives it a little zing.

thanks for sharing this wonderful recipe....it will be a regular in our household.
