Ok I have been to O'charleys several times since one opened here last year. I always get there classic caesar salad this time with no croutons of course it consist off romain lettuce some shreds of paresman cheese and of course the homemade ceasar sauce. the menu only had the carb count not the whole nutrional value of it so i decide to try and look it up and find out what i want to know. I found at dietfacts.com this info all it had was the salad with the croutons but even at that some of this stuff is unblieveable.
here goes:

O'charleys -classic ceassar salad (includes dressing)
romaine lettuce, grated parmesan cheese and crunchy croutons tossed with a ceasar dressing

calories-464----whoa!
calories from fat 342
total fat 38g <--- how can this be
sat fats 11g
cholestorol-30g
sodium-548mg
total carb 11g
fiber 4 g
protein 19.

never in my life have i seen a salad with this many calories or fat grams i mean without having meat i hope its a typo if not this will deif end the o'chalreys salads for me I'll stick with my kraft dressing and a head of lettuce
~~~tori~~ :?:
A lot of salads as is tend to have a lot of fat and calories, I would say the parmesean adds a little and the rest is the dressing. It is a reason if you are ever at a restaurant to ask for dressing on the side and only use a little bit.
Other things in salads that can add a lot of fat and calories besides cheese are avocados and bacon.
I would ask the manager to give you the nutritional information right from the dressing itself. They can do it, we own a restaurant and always provide that information when requested. You can also ask what kind of dressing they use so you can check it out for yourself. I am a little amazed at the fat grams in there too!
I just check Fitday and they come up with just about the same for 4 cups of salad, a little higher calorie count but a little lower fat grams, but this also included the croutons which were 24.43 grams of carbs.
I agree that it's the dressing that's the culprit. The cheese also has some fat but it doesn't sound like there's alot of cheese on it.
Low carb dressings will be high in fat because they rely on oil for flavour rather than sugar just the same as low fat foods have a higher carbo count than regular foods. Get your dressing on the side and add just a little.
1 gram of fat has 9 calories so ....342 cals from fat is right!
