Thumbs up Cauliflower "Potato" Salad

4 cups cauliflowerets
3 hard boiled eggs, diced
2 ribs celery, sliced
1/2 cup onion, chopped
1 tablespoon Dijon mustard
3-4 heaping tablespoons mayo
salt, pepper, dill - to taste

1. Cook cauliflower in microwave until soft, but not mushy.
2. Drain well, and cool.
3. Mix with other ingredients.
4. Chill at least 2 hours before serving.

This is amazingly good, and tastes just like regular potato salad.

I just made this with some modifications.

I made mine a bit creamy by using only 1 heaping tablespoon of mayo and then the rest is nonfat plain yogurt. This cuts down on the fat and calories. I also love olives in my potato salad, so I added some.

I think this is really great and it does taste a lot like regular potato salad. I would definitely recommend anyone to give it a try.

I made this twice in the last two weeks. It's really good and comes in handy for a snack, too.
