I posted this on the under food and point issues, but I enjoyed it so much I'm posting it here too!
Sweet potatoes are good for you. I eat them baked,
baked fries. I had an extra baked one left over from yesterday, so I got it out of the fridge, mashed it really well with a little Splenda and cinnamon and topped it w/a little FF cool whip. It was just like sweet potato pie!(w/out crust) It was low points and pretty good for you! I am adding this to my low points dessert list for sure. I don't know why I've never done this before!

I am sure going to keep that in mind. I don't care for sweet potatoes, but my husband LOVES them. Now that I have an idea how to fix that sweet potato pie, I will fix it for him and see what he thinks!!
