Ruby Tuesday's has these great Creamy Mashed Potatoes that are considered low carb, but they work well on WW also. Does anybody have a similar recipe? Although skinny mashed potatoes are only 2 points, I would love to sneek another vegetable in on my husband and myself.

Cauliflower "mashed potatoes"

Ingredients


8 cups fresh cauliflower
1 tsp. reduced calorie margarine
2 tsp. fat free cream cheese
1 tblsp minced onion
1 tsp. garlic powder
2 tblsp fat free half and half
salt and pepper to taste

Instructions


steam cauliflower until very soft.
Saute in melted margarine with garlic,onion,salt and pepper.Add remaining ingredients. mix with a hand mixer to desired consistency.

Ooh. Thank you. I can't wait to try it. I saw some low fat recipes on the web but they didn't have nutritional info and I don't have the patience to try to calculate the points myself. I'm glad you found one with the Points Value. Thanks a bunch (of cauliflower)....lol.
