Since I started SB this forum has helped me so much with its recipies. Here are a few of my own to add to help with the dreaded P1.
Amazing Chunky Salsa
(It seems like alot of ingredients but most are in your kitchen)
2 pks Grape tomatoes chopped and strain juice
1/3 each red. yellow and orange bell peppers chopped
1/2 med cucumber chopped
2-3 green onion chopped
1 clove minced garlic
1 cup FRESH parsley chopped
3 tbsp apple cidar vinegar (or plain)
2 tbsp olive oil
2 tbsp lemon juice
2-3 tbsp lousiana hot sauce
Spices - Adjust to taste
1/4 tsp cumin
1/4 tsp salt and black pepper
1/2 - 1 tsp caynenne
1/2 tsp crushed jalapeno pepper ( or red pepper flakes)
1/2 tbsp cajun seasoning
Mix all together and let sit at room temp for 1 hour for spices to warm. I keep this in the fridge for a week, but it never lasts that long. In p2 you can have it with whole wheat tortilla chips. In p1 I scoop it up with romaine lettuce hearts.
Try it out and let me know!! The longer it sits the warmer the taste.
