This is something I tried last night, and it was pretty good, and very filling.

You need:

1/2 c. whole wheat elbow macaroni (or 3/4 c. whole wheat rotini)
2 c. frozen vegetables, thawed
1/4 c. lf cheese sauce
2 T. ff sour cream

Cook the pasta until tender; drain. Turn stove on low heat. Add thawed vegetables (I used broccoli and cauilflower mix) and cheese sauce, stirring constantly until well blended. Remove from heat and add sour cream, stirring until well blended.

I used 1/4 c. sour cream last night and it was just a little too much. I also think it'd be good with mushrooms or chopped red pepper. Just an idea. It's easy and quick!

Yum it sounds sooo good. I love mac and cheese. What kind of cheese sauce would you use? I haven't really seen a lf cheese sauce around.

Somehow I don't think we have lf cheese sauce here in Canada. Maybe Carb Options will come out with one.
