1. Using a sharp knife, slice a pocket in the "chubby" part of the chicken breast.
2. Slice the bacon into small pieces suitable for stuffing.
3. Fill the breast pocket with cheese and bacon. Secure with toothpick.
4. Pan fry in olive oil with pan covered for 5 minutes. Turn chicken, then continue for another 4.

Variations include:
1. Skinny breasts? No problem! Pound them flat with a hammer and make a roll up! Works the same, tastes great.
2. Really chubby breasts? Try doing multiple pockets!
