A lowcarb recipe for Nachos? OMG I am craving them soooo bad. I just want to run to taco bell and grab some. I have tried soy type chips and they aren't too bad. Kinda nutty tasting. I know it wouldn't be tooooo lc with all the cheese and stuff, but maybe I can find a lesser of two evils version. :lol:
Tonight I am trying Atkins recipe for Asian Beef Salad. Looks awesome and induction appropriate too!

I don't remember who said it. But they used LaTortilla Factory LC shells and baked ( ? ) or fried them. Maybe they broke them into pieces first then baked/fried them?

I did that. I used a pizza cutter and cut them into triangles and deep fried them for a few minutes.....Yummy

I dont' know if you are willing to try this, but my DH is a big nacho eater. He just pulls out the plain pork rinds, uses some queso to pour over top of them (heated), gobs on some hamburger, onions and jalapenos and goes to town! You can't really taste the pork rinds...just gives it the crunch you need ;)

I like pork rinds straight outta the bag :lol: Dh thinks I'm totally gross! I could definitly eat your DH's nachos, although I think I would skip the jalepenos. :eek:
