Default chicken bruschetta salad - P1

Great food idea to share

hey all - just wanted to share an idea - I baked several pieces of skinless, boneless chicken breast then cooled it and diced. Mixed it up with some bruschetta spread (diced tomatoes, red onion, red wine vinegar, and olive oil) and some basil. I've kept it in the fridge and pull it out whenever I need a snack. I have also put it on salads and even used it as a side dish with dinner. Yum!!

Isn't bruschetta just crusty bread with topping on it? I have seen the topping pre-made and on sale but not the whole thing pre-made. I should think whole wheat bread or rolls would work just fine with the above topping.

This is really wonderful on spaghetti squash too! I make something similar, without the red onion, and sometimes add goat cheese when I'm doing the hot "cappelini pomodoro" type thing on the spaghetti squash, and it'll make you cry it's so good.

Oh, RuthXXXX, I almost forgot, Bruschetta is actually just referring to the tomato garlic basil mixture, the bread isn't part of it. It's very healthy and versatile, and I haven't had it since I've been on SB, hmmmm, suddenly I've gotta run!
