Welcome to The Beach.
Do you have the book? There is a Portobello MUshroom Pizza. You don't cut the mushroom. Just cut off the stem and put pizza toppings on the cap. I'm off to work now but will check back later and post the recipe.

Attagirl, Portobello Mushrooms are awesome! They have such great flavor! Most of the recipes I know use bad carbs, so I am going to have to find new ones. Portobello mushrooms lend themselves well to taking the place of a burger because of their size. Maybe you could fix one up like a burger with condiments?

Balsamic Portobello Mushrooms - South Beach Diet Recipe (Phase 1)
Ingredients:
1 shallot or red onion diced
3 cups of portobello mushrooms ( I like with sliced adult caps)
1 clove garlic
3 tbsp Balsamic vinegar
Spirtz of Olive oil
thyme
basil
chives
Directions:
Sprits non stick fry/saute pan with olive oil. Saute shallots/onions for 2 minutes. Add Garlic and saute for 1 more minute. Add Portobello mushrooms, Balsamic vinegar, thyme ( this is Great with fresh thyme) and basil. Lower heat and cover pan. Cook for 7-12 minutes until mushrooms have turned a brownish color and become flexible. If the pan gets dry you can add a splash of water, broth, or red wine.

Portobello Pizza by The South Beach Diet - Online. This recipe is optimal for Phase 1 or Phase 2 of the South Beach Diet.

Phase: 1 or 2
Serves: 6

I N G R E D I E N T S
1 teaspoon extra virgin olive oil
1 clove garlic, diced
6 ounces portobello mushroom caps, cleaned
Pinch salt
Pinch freshly ground black pepper
12 ounces mozzarella cheese, sliced or shredded
10 fresh basil leaves
2 fresh tomatoes, sliced, roasted, or grilled
Oregano leaves (optional)

I N S T R U C T I O N S
Combine the oil and garlic in a small bowl and rub the mushroom caps on all sides with the mixture. Place the caps, top side down, in a circle on an oiled baking sheet. Season with the salt and pepper. Arrange the cheese, basil, and tomato slices alternately in a circle on top of the mushrooms. Sprinkle with the oregano, if using. Bake at 450 degrees F until the cheese melts, about 3 minutes.

Phase 1: The Strict Phase
For the first two weeks, you’ll eat normal-size helpings of meat, fish, vegetables, eggs, cheese, and nuts. You’ll have three meals a day, plus snacks, and it will be your job to eat until your hunger is satisfied. You’ll shed somewhere between 8 and 13 pounds—mostly in your belly area—and your cravings for sugars and starches will disappear.

Portabella mushrooms are divine sauteed in a a light butter until tender. They are great. They have a meaty, earthy flavor and a good texture.

I have been contemplating making this recipe where Rachael Ray rubbed portabellos with olive oil and grill seasoning, grilled them, and topped Ceasar salad with them. I think that sounds so yummy!
